  1. Colocamos las dos cucharadas de aceite vegetal, encendemos a fuego medio. Yo coloqué unos trocitos de cebolla solo para aromatizar más el aceite. Sofreímos los fideos sin que lleguen a dorarse demasiado.
  2. Pasados unos tres minutos sofriendo, añadimos los champiñones que hemos cortado en rebanadas. Recuerden, la presentación es importante. Continuamos sofriendo.
  3. En la licuadora ya debemos de tener el tomate (jitomate), las ramitas de hierba aromática (en este caso estoy usando perejil, pero pueden usar epazote, cilantro, orégano, etc.), la cucharada de consomé de pollo, el cuarto de cebolla, el diente de ajo, el chile morita (si no lo consiguen pueden usar chipotle) y las dos tazas y media de agua. Licuamos perfectamente.
  4. Incorporamos la mezcla que licuamos a nuestros fideos con los champiñones. Esperamos a que suelte el hervor.
  5. Una vez ha soltado el hervor, incorporamos la calabacita verde cortada en cuadritos, bajamos el fuego.
  6. Esperamos a que vuelva a hervir y lo dejamos así por alrededor de dos o tres minutos
  7. Finalmente, debemos revisar que la pasta se ha cocido, rectificamos de sal y ¡Buen Provecho!
