- 4 cucharadas aceite
- 1 cucharada estragón
- 1 taza vino blanco
- 200 ml crema de leche
- 200 gr champiñones

- Lo primero es limpiar el filete y dejar solo carne magra, luego cortarlo en medallones de unos 3 a 5 cms de ancho dependiendo el gusto, si no está muy redondo puedes amarrar con un hilo para darle la forma de medallón o dejarlo así no más.

- Ahora ponemos a precalentar el horno a 180°C, mientras tanto en una sartén poner el aceite, salpimentar a gusto y agregar el ajo picado muy chico, esperar calentar el aceite y dorar el ajo, incorporamos la carne, solo la sellamos y retiramos.

- Luego ponemos la carne en una budinera y la ponemos al horno por aprox unos 20 a 25 minutos dependiendo el punto del gusto de cada uno.

- Mientras la carne esta en el horno nosotros prepararemos la salsa, para esto usamos el mismo sartén del sellado de la carne, le agregamos el estragón, el vino blanco y calentamos 5 minutos para que suelte el aliño del sellado y se mezclen los sabores, luego agregamos los champiñones y esperamos a que estén cocidos y agregamos la crema de leche, debemos revolver constantemente hasta que empiece a espesar y apagamos.


- Esperamos unos 5 minutos y sacamos la mitad de la salsa, la molemos (yo uso la mini pimer) y la volvemos a incoporar a la parte no molida.

- Una vez teniendo lista la carne y la salsa no nos queda más que disfrutar!! En nuestri caso fue acompañada de un buen puré de papas.
