Ingredients and spices that need to be Prepare to make Arroz con Pato, Champiñones y Trufa:
- 2 Confits (muslos) de Pato
- 1,5 litros Caldo de Carne
- 1 Cucharada Salsa Worcestershire o Bovril
- 1 Cebolla
- 8 Champiñones medianos
- 400 grs Arroz, utilicé redondo
- 1 Trufa Negra pequeña o 2 Cucharadas de Pasta de Trufa Negra
- al gusto Aceite, Sal y Pimienta Negra
- al gusto Queso Pecorino o Parmesano Rallado
Instructions to make to make Arroz con Pato, Champiñones y Trufa
- Para preparar los Confits de Pato, tenemos 2 opciones:
- Si son frescos, Lavamos y secamos los Confits de Pato. Los ponemos en la Olla a presión con el Caldo de Carne y la Salsa Worcestershire. Dejamos cocer a presión con fuego medio durante 30 minutos.
- Si están confitados, los cocemos en una Olla con el Caldo de Carne, la Salsa Worcestershire y la Grasa del Pato durante 15 minutos a fuego medio.
Una vez templados, troceamos la Carne y la reservamos. También nos quedamos con el Caldo. - Pelamos y picamos la Cebolla y la pochamos en una cazuela con 1 Cucharada de Aceite a fuego medio. Añadimos los Champiñones lavados, troceados, el Arroz y Sal, rehogamos unos minutos y agregamos el Caldo. Cocinamos el tiempo que nos indique el productor de Arroz a fuego medio.
- 10 minutos antes de acabar la cocción, añadimos la Carne de Pato troceada.
- Cuando haya acabado la Cocción, retiramos del fuego y añadimos la Trufa picada o Pasta de Trufa y la Pimienta Negra. Removemos, tapamos y dejamos reposar 10 minutos.
- Y... ¡¡Listo!!! Servimos con Queso Rallado al gusto.
También se puede hacer de un día para el otro, pero dejará de tener la Textura Melosa y el Arroz perderá "el dente".
