  1. Para la salsa base, calentamos la leche junto con la cebolla claveteada (incrustamos los clavos en esta) hasta wue esté tibia. Por otro lado hacemos un roux derritiendo la margarina y añadiendo el harian de un solo. Cocinar un minuto y añadir la leche tibia en dos o tres partes para evitar grumos. Cocinar sin dejar de revolver por 20 minutos. Condimentar con nuez moscada.
  2. Para realizar la salsa de champiñones, rehogamos una cebolla en brunoise junto con el ajo sin que doren, añadimos los champiñones en cuartos y dejamos cocinar sin mover para evitar que el champiñón se deshidrate más de la cuenta por 5 minutos. Añadimos vino blanco y reducimos, agregamos la bechamel en cantidad necesaria, sal, pimienta y un punto de mostaza. Cocinar por 5 minutos y terminar con una nuez de mantequilla o crema de leche.
  3. Servir sobre una pechuga a la parrilla, horno o plancha y en este caso acompañada con unos cascos de papa.
